Friday night fakeaway: How to make sweet and sour chicken

Ingredients:

5 chicken breasts

2 tbsp light soy sauce

Garlic clove finely chopped

1 cup plain white flour

1 onion

1 tomato

3 spring onions

For the sauce:

85g brown sugar

4 tbsp tomato ketchup

2 tbsp light soy sauce

5 tbsp white vinegar

85ml pineapple juice

1/2 tsp Chinese five spice

2 tsp cornflour

Method:

Cut your chicken and toss in a large bowl with soy sauce, garlic and seasoning.

For the sauce, add your sugar, ketchup, soy sauce, vinegar, pineapple juice and Chinese five spice into a pot and simmer on a medium heat.

Let it simmer until the sugar dissolves.

Then combine cornflour with 2 tbsp of water.

Add the cornflour mixture to the sauce and simmer for about 2 minutes to let it thicken. Remove from heat and set aside once it has thickened.

Pour about an inch of vegetable oil into a wok over a high heat.

Place flour in a large bowl and add your chicken. Toss lightly to coat.

Amy recommends doing this in small batches and adding the coated chicken to oil one by one.

Be very careful with the oil as it can splatter.

Cook your chicken in the oil until golden brown. Drain and pop them on a plate with some kitchen roll to remove excess oil.

Next fry your onions and add the tomatoes.

Add in the sauce and chicken.

Toss in the spring onions and serve.
