Blood-orange and lime spritzer non-alcoholic cocktail recipe

For the lime syrup
- 300g granulated sugar
- Freshly grated zest of 4 limes and juice of 8
For the spritzers
- 800ml blood-orange juice
- 800ml sparkling water
- Ice and spirals of citrus zest, to serve
METHOD
- To make the syrup, put 350ml water, the sugar and the zest in a saucepan. Bring to the boil slowly, stirring to help the sugar dissolve. Leave to cool and for the zest to infuse.
- Once cool, stir in the lime juice and pour through a nylon sieve.
- To make a batch of the spritzers, mix the blood-orange juice with 350ml of lime syrup. Slowly add the water – it will really fizz – and serve over ice with the citrus zest as a garnish.
